Gruppo Zernike is a company famous for manufacturing real and substantial

A few years ago, following this path of technological innovation, which has made us one
of the leaders in the Food Service Industry and the Mass Retail Channel, we launched
KLIMA, our first patented range of maturation cabinets for meat and cheese. Even then,
our maturation cabinet had unique and patented features, making them highly
performing and able to meet the needs of people who want to produce according to
tradition, to obtain non-industrial customized, natural, genuine and hygienically safe
products.
The evolution!
Today comes the new generation of KLIMA professional cabinets. All patented, they are
a wide multifunctional range, able to satisfy the diverse users' needs.
For years it has been tried to turn maturation and dry-aging into industrial processes
(automated) by the use of specific equipment, but KLIMA is the ONLY device which,
thanks to special technical measures, its manufacturing quality and the adoption of an
innovative technology, guarantees high performances and excellent results.
KLIMA is a multitasking range. Each model is able to create automatically the desired
microclimate and to perform one or more functions: meat dry-aging, cured meat and
cheese maturation, food drying, food preservation and much more.

Our ambition was to create an easy to use high performing cabinet with
cutting-edge technology.
KLIMA MEAT combines technology and simplicity making the dry aging
process easy to execute for everybody: restaurants, steak houses,
butcheries, small farms, and all those businesses that, from now on, will be
able to entirely manage and control this process, crucial for the
organoleptic qualities of the meat. An aspect to which consumers have
been giving more and more attention in the last years.
With its clear and modern design, the patented KLIMA MEAT cabinet is the
result of the perfect mix of modern technology and old dry aging methods,
being able to recreate the perfect conditions for an high quality meat aging
process, enhancing meat taste and tenderness. All that is reached in shorter
times than by traditional methods.
Each function is shown on the touch screen display, with intuitive icons
making easy to control and change all the phases and parameters.
The electronic control system allows the user to
set temperature and humidity precisely to the
desired degree and to perfectly manage the
internal air circulation. All this, combined with
the patented sanitization and oxygenation
system «OxigenKLIMA»*, makes it possible to
create the ideal climate for any kind of meat.
Thanks to OxigenKLIMA, you can run bio-safe
aging processes, reducing the dangers of
Listeria, unwanted mold and unpleasant
smells.

Two main limits of both traditional dry aging methods and
current technologies in the sector are: long process
duration and meat weight loss, this latter even up to 10%.
This means a loss in the actual value of the product. The
exclusive and patented humidity generator and the specific
KLIMA cabinets internal structure create an even
distribution of the humidity in each point of the aging
chamber. Moreover, thanks to the cutting edge control unit
it is possible adjust the flow. The result is an optimal aging
result with a very low weight loss percentage (around 3-4%)
and a reduction in productive times and cost.
The patented system OxygenKLIMA
delivers a measured and planned
oxygenation of the meat, which kills
micro-organisms and molds. This
technology makes the difference during
the aging process, assuring great bio-
safe results in shorter times.
Only KLIMA cabinets have this kind of
settable sanitization and deodorization
system, which can be activated at the end of
each process for a complete hygiene of the
chamber.

The reproduction of the perfect climate inside the
chamber and the total control over it will allow you to
prevent weight losses, to shorten the production
time and to keep the proliferation of unwanted
microorganisms under control.
KLIMA MEAT guarantees the best dry aging process
for any type of meat and cut, enhancing its smell,
juiciness and colour.
This is obtained through an electronic probe for
humidity control, which can be set on a variable
range going from 10% to 99% to suit the requirements
of any kind of meat.
Thanks to the great flexibility of KLIMA MEAT you can
choose the best type of maturation process:
- SLOW, for a long dry aging process
- FAST, a quicker process which cuts traditional dry
aging times
In both cases KLIMA MEAT executes a dry aging
process.

It is our deliberate choice to equip the KLIMA system with an external
pH probe to give the user the maximum flexibility and reliability.
It is thus possible to use KLIMA MEAT to treat different cuts of meat for
different durations and assess the maturation level of each single cut
throughout all the aging process.
A pH gauge placed inside the cabinet would only allow to measure
one cut and would be a limit to the overall machine's performance.
However, the pH probe does not interact with any of all the other
functions or parameters set in the cabinet: temperature, duration and
final results.
The pH probe only assesses the point of maturation reached by meat,
letting you know whether it is ready for consumption or not.

Dry aging is a natural process which spontaneously
occurs at a physico-chemical level inside the meat
muscles, right after the slaughter. After the slaughter,
meat is nearly inedible: it tends to be hard, tasteless and
difficult to digest.
For this reason, before offering it for consumption, meat
must be left to age and soften for obtaining an excellent
quality. Each single cut needs a specific aging process
for fully enhancing its characteristics and avoid the
drying and decomposition of the meat, due to a too
prolonged aging process.
The days required for a good aging process depend on
the type of meat, the type of cut, the weight and the
product's organoleptic characteristics, as well as on the
type of aging process and the desired final result.
The four elements: temperature, humidity, oxygen and
time are tightly linked to each other. These parameters
can be adjusted according to one's needs and
nevertheless there are limits beyond which it is better
not to force the process, to avoid reducing the overall
quality. The data shown in the chart are purely for
illustrative purposes, because we consider unethical to
indicate precise process durations with KLIMA MEAT, as
these are highly variable.

More and more often, small producers are
forced to abandon artisanal production and
to resort to preparations or substitutes.
The KLIMA AGING SYSTEM cabinets solve

Patented long bars and frames system adjustable
both horizontally and vertically. The specific joints on
the bars sides give stability and resistance, the
triangle shaped jags on the bars facilitate the
products loading and unloading procedures.
This system makes it possible to avoid the use of
hooks, rationalizing space vertically.
The long bars allow you to use all the chamber space,
increasing productivity and making it very easy to
shift and remove products.
