VANITAS REVEALS NEW-LOOK  

QUEENSLAND January 19, 2016 – Vanitas, Palazzo Versace’s signature restaurant reveals a 

new-look scheduled to launch this Valentine’s Day – inviting guests to rekindle their love affair with 

the award-winning restaurant on the most romantic evening of the year.  

The new-look is set to reinvigorate and elevate the senses of its guests through bespoke fine dining.     

Heading up Vanitas’ rejuvenation as Chef de Cuisine is Australian born Dayan Hartill-Law who 

defined his skills in the kitchens of 3 hatted restaurant Quay in Sydney and 2 Michelin Star restaurant 

Dinner by Heston Blumenthal at the Mandarin Oriental Hotel  in London.  

Dayan brings his signature styles of whimsical techniques and often playful cooking to the table, 

focusing on a seasonal menu using the freshest quality local produce.  

This exciting change also comes with a newly appointed Restaurant Manager Nigel McDowell who 

comes equipped with extensive experience on the Gold Coast dining scene, managing Moo Moo The 

Wine Bar & Grill and Rock Salt in Broadbeach.  

Sommelier Megan Cox completes the new team with her wealth of wine knowledge gained from 

previous roles at Rockpool and Spice Temple in Sydney. 

More information on Vanitas’ new-look will be revealed in the coming weeks.
