Food Services Advisory Council

Auxiliary Services Conference Room (Bldg. 8, Rm. 1106)

The meeting was called to order at 9:30 AM by Britt Stromquist (Chair)

  1. Approval to Audio Record Meeting

Britt notified members that the meeting was being recorded to assist when writing meeting minutes.

  1. Approve October 22nd, 2012 Minutes

Britt Stromquist asked members to review the minutes from October 22 2012 meeting. Moved by Catherine Christie and the motion passed unanimously.

  1. Ratification of Vice-Chair

Britt informed the committee that President Delaney has ratified the nomination of Jacqueline Shank as Vice-Chair.

  1. Facilities Report

Vince reminded the committee that the new Osprey Café and Jamba Juice were both opened beginning of fall term last year. Also, in the first part of January, Salsarita’s in the Student Union was replaced with Papa Johns, and Sbarro was closed when Papa Johns opened. The construction drawings for the new Chick-fil-A that will be placed where Sbarro was located are being finalized and construction should be underway sometime soon. Construction is expected to be completed by the start of summer B 2013, but since building 8 is rather old there may or may not be a couple bumps along the way.

Vince also mentioned that there are plans to start constructing a clubhouse where the housing trailer used to be located on campus. The clubhouse will have amenities such as a game room, pool and food services much like the first floor of the Fountains. Unlike the Fountains however, this location will be open for all students on campus to use. Construction is looking to be started in early summer 2013, and completed by March 2014.



  1. Fall Survey Results

Alicia reiterated that the surveys distributed to students are now in electronic form instead of paper. The fall survey was administered back in November 2012, and they received 420 responses. The overall dining facility was rated at 44% excellent, and the cleanliness was also rated highly. The Osprey Café’s speed of service was rated at 49% excellent, and the friendliness of the staff at 53% excellent. The areas students indicated that could be improved upon are value, promos and food. Alicia stated that they are working on more promotions and special events for Osprey Café, like street foods and they just held a Valentine’s Day lunch.

The report showed that 28% of students spent around $8 per visit, with other amounts having varying percentages. The value of the food provided ranged mostly from good to very good and 43% were likely to recommend Osprey Café to a friend. 52% of the responding surveyors are on the meal plan. Dave mentioned that the surveys for the spring semester should be distributed around mid-March.

Vince added that he goes over the surveys in-depth and was very impressed with the fall survey. This survey was particularly better than past surveys likely partially due to the fact that in the past two years there was no dining hall, and the previous dining hall was quite dated. One item of note on the survey was that 40% of responders did not believe Ozzie’s was good value. It seems that students may be equating the pricing of the convenience items, not grill items, at Ozzie’s to that of Wal-Mart, whereas Ozzie’s is a convenience store, not a supermarket.


  1. Operational Report

Korey echoed that since Salsarita’s was closed for Papa Johns, they moved some of the more popular items, such as tacos, into Chick-N-Grill’s menu. On Chick-N-Grill’s menu, they have eliminated chicken tenders & fries, since they are already being offered at Coyote Jacks and the Boathouse. Taco sales at Chick-N-Grill are doing ok, but the normal Chick-N-Grill items are doing the majority of the sales. For the Boathouse they have added wide variety of nacho selections to the menu, and looks to be doing well. Boathouse sales on the weekends have been satisfactory, but mostly due to Student Affairs collaboration. Boathouse has been discounting the price of chicken wings, tenders and sodas, with Student Affairs picking some of the cost of food items. So far on the weekends Student Affairs has been paying a $700-$800 bill. The Boathouse also stayed open late for Super Bowl Sunday, and sold a little over 1,000 wings.

Papa Johns’ sales have been doing well. They have a lower average of sales because the total price of pizza and a soda is lower than that of a sub, chips and a drink. They have to move more foot traffic through to match sales. With the closing of Sbarro, most of the Alumni Square traffic has moved to Outtakes. Chopped ‘N Wrapped sales are doing well. They have added a third employee to keep customers moving through efficiently. Chopped ‘N Wrapped has several regular customers, which is promising.

Osprey Café is doing well, and have been making the majority of its own bread and rolls. They are gluten-free, although they advertise items as made without gluten ingredients, because you have to be technical about everything is made. Not everything in the café is not entirely gluten free, only specific items are. Korey added that gluten free appears to be one of the leading topics over vegan and vegetarian foods because of allergies and celiac disease.

Dave Jordan added that being informed in food allergies and celiac disease is Chartwells’ number one priority. Just recently they were all required to undergo training to learn more about the effects of food allergies and celiac disease. He is currently looking to hire a dietician to better serve the needs of students. Jacqueline Shank asked if he was looking for someone to be full or part-time registered dietician. Dave replied that full-time would be ideal, but they are still looking into the job description before making a decision.

Jacqueline thanked Chartwells for allowing their 70 Nutrition students to observe their Chefs in Osprey Café for one of their classes, and it would be delightful if the program would be allowed to continue to future semesters. She added it is very convenient for the students to observe on campus, rather than having to find a place off campus for credit. Catherine Christie added that if a dietician was hired, their graduate students would be able to do their food service rotation as well.

Paul Schreier asked what kind of changes Chartwells expects to see with the sales of Chick-N-Grill when Chick-fil-A is on campus. Dave responded that they do not foresee any noticeable changes. Chicken Grill gives the appearance of being healthy, and Chick-fil-A is mostly fried chicken. Korey added that Chick-fil-A brings customers to eat on campus, since people are consistently bringing Chick-fil-A bags on campus. He mentioned Chick-fil-A might heavily impact Outtakes and Chopped N’ Wrapped in Alumni Square though.

The council typically meets twice a year, once in the fall term and again in the spring term unless another meeting is warranted.
