Vanitas restaurant at Palazzo Versace Gold Coast has been awarded One Hat at the 

prestigious 2017 Brisbane Times Good Food Guide awards on Monday evening.  

Vanitas (Italian for ‘vanity’) is renown as a top restaurant on the Gold Coast and has been 

awarded with an impressive list of accolades since it opened its doors over 15 years ago.  

 

The ever evolving seasonal menu presented by Chef de Cuisine Dayan Hartill-Law embraces 

sustainability and promotes local produce; a philosophy the team at Vanitas have introduced 

since reopening their doors with a fresh new-look in February this year.   

Chef Dayan was humbled to retain One Hat on behalf of Vanitas, “I think that our team has 

accomplished a lot of great things in such short time, I'm looking forward to growing and 

encompassing all that is the Gold Coast together and to continue to ensure our guests’ 

experiences are above and beyond expectations.” 

Dayan defined his skills in the kitchens of 3 hatted restaurant Quay in Sydney and 2 Michelin 

Star Restaurant Dinner by Heston Blumenthal at the Mandarin Oriental Hotel in London.  

Sommelier Megan Cox shares her wealth of wine knowledge gained from previous roles at 

Rockpool and Spice Temple in Sydney, managing a 400-strong list of international and 

Australian wines at Vanitas.
