Winemaking
Notes:
The Barbera, Croatina and Merlot grapes have different ripening times and
are carefully selected and fermented separately in steel vats for two to three
weeks at very low temperatures, in order to completely extract the primary
aromas. At the end of fermentation and after blending, the wine rests in steel
vats for at least six months. Afterwards the wine is bottled and matured in the
cellar for at least two months.
